What are some good Grape-Nuts pudding recipes?
Yankee’s version of grapenut pudding requires heating 1 cup of milk to a scalding temperature and pouring it over 1 cup Grape-Nuts cereal in a bowl, letting the mixture sit for five minutes. In a separate bowl, beat 4 large eggs, 1/2 cup sugar, 1 tablespoon vanilla and a pinch of salt, and then stir the mixture into the cereal mixture. Grease a 2-quart casserole dish with 1 tablespoon unsalted butter, pour the cereal into the dish, and liberally sprinkle grated nutmeg on top. Place the baking dish into a large roasting pan, set the pan in the oven, and add water to the pan until it reaches halfway up the casserole dish. Bake for one hour, or until the center of the pudding jiggles slightly.The King Arthur Flour version uses 2 cups milk combined with 1 cup cream, 3 eggs and 2 teaspoons vanilla. Stir in 3/4 cup Grape-Nuts cereal, 1/2 cup brown sugar and 1/2 teaspoon salt. Remove pudding from the oven, and let it sit for 30 minutes, or cool completely before refrigerating.
