What is Yeung Chow fried rice?

Yeung Chow rice is also usually prepared with leftover rice. The dish is named for General Yang Su, who liked to eat rice fried with egg. It is a staple dish in Yangzhou culture as well as a dish commonly eaten for special occasions.
