How do you cook a redfish?

You can cook fillets of redfish with the skin still attached on a regular grill. Coat the skin side with oil, rub a mixture of garlic, pepper, cayenne pepper and salt on the other side, and grill the fillets on medium-high for about 5 minutes on each side.To make Cajun blackened redfish, melt 1/4 cup of butter, and leave it to cool. Mix 1 teaspoon of cayenne pepper, 1 teaspoon of freshly ground black pepper, 1 teaspoon of lemon pepper, 1 teaspoon of garlic powder and 1 teaspoon of salt in a separate bowl. Take four red drum fillets, brush them with melted butter, and sprinkle the spice mixture on them. Cook the fillets in a skillet on high for about 2 minutes on each side. After that, transfer the fish to a baking dish, add 1 1/4 cups of Italian-style salad dressing on top of it, and bake everything in an oven at 350 degrees Fahrenheit for about 30 minutes. Source:
